TURKEY PESTO WRAPS

-1 large tortilla, burrito-size -1 1/2 tbsp mayo -2 tbsp pesto -2 slices havarti cheese -7 thinly sliced turkey deli meat -3–4 leaves romaine lettuce, thinly sliced -1–2 tbsp thinly sliced red onion -2–3 tbsp sliced roasted red bell pepper -1 small avocado -avocado oil -pinch of sea salt -1/2 fresh lemon, optional

Combine shredded lettuce and sliced red onion in a small bowl and drizzle with a small amount of avocado oil and a sprinkle of sea salt. Toss to coat and set aside. 

Spread mayo and pesto in the middle of a tortilla. Add cheese, turkey, bell pepper, turkey, then top with the lettuce and onion mixture.

Scoop avocado onto top of everything and give a squeeze of lemon juice. Next, fold up the wrap, keeping the short ends tucked in as you roll the wrap over to seal. Halve and enjoy!
