Just toss a handful of spinach into the blender with two eggs and blend away. I like to add a little parsley if I have it, but that’s not necessary.
Heat a non-stick pan over medium heat and add butter. Once butter is melted and the pan is hot, pour in the spinach eggs.
Use a rubber spatula to pull eggs toward the center until almost set.
Once they reach the almost set stage, turn off the heat and flip.
