-2 eggs
-1/2 cup fresh spinach (packed)
-1 tsp butter or ghee
-pinch of salt and pepper to taste
-cheese such as parmesan or cheddar (optional topping)
-chopped parsley (optional topping)
Add butter to a small non-stick skillet over medium heat. Once butter is melted, pour blended eggs & spinach into pan. You want the pan hot enough to where the eggs start cooking immediately.
