PROSCIUTTO WRAPPED DATES (GOAT CHEESE STUFFED DATES)

-12 medjool dates -4 oz prosciutto, (you want twelve 1-2 inch x 5 inch strips) -2.5–3 oz creamy goat cheese -honey, for drizzling -about 8 sprigs fresh thyme

Preheat oven to 400F. Cut a small slit in each date with a paring knife, being careful not to cut all the way through.

Stuff each date with about 1 teaspoon of goat cheese.

Sprinkle the top of each date stuffed with goat cheese with a little fresh thyme.

Tear each piece of prosciutto in half vertically into mostly equal pieces and use one 1/2 to wrap around a date. Continue with the remaining dates and place dates on a parchment paper-lined baking sheet.

Bake for 20-25 minutes, until prosciutto is browned. Drizzle the top of each date with a little honey and top with more fresh thyme. Allow them to cool for about 15 minutes to room temperature to serve.
