-12 medjool dates-4 oz prosciutto, (you want twelve 1-2 inch x 5 inch strips)-2.5–3 oz creamy goat cheese-honey, for drizzling-about 8 sprigs fresh thyme
Tear each piece of prosciutto in half vertically into mostly equal pieces and use one 1/2 to wrap around a date. Continue with the remaining dates and place dates on a parchment paper-lined baking sheet.
Bake for 20-25 minutes, until prosciutto is browned. Drizzle the top of each date with a little honey and top with more fresh thyme. Allow them to cool for about 15 minutes to room temperature to serve.
