PEANUT BUTTER OATMEAL COOKIES

– 1/2 cup butter (one stick) (softened) – 1/4 cup creamy peanut butter – 1 cup coconut sugar – 1 egg – 1 tsp vanilla – 1 cup all-purpose flour – 3/4 cup rolled oats – 1/2 tsp baking soda – 1/2 tsp salt – 1 1/3 cup mini chocolate chips – sea salt (for topping)

Preheat oven to 350F. Combine flour, oats, baking soda and salt in a medium-sized bowl and set aside.

In a large mixing bowl, use an electric mixer to beat butter and sugar. Add the peanut butter, egg and vanilla. Beat until smooth. 

Add the dry ingredient mixture and beat on low until fully combined. Stir in chocolate chips using a rubber spatula. Use a cookie scoop to drop cookie dough on a parchment-lined baking sheet.

Bake for 9-11 minutes. Allow cookies to cool for 5 minutes before transferring to a wire cooling rack. Sprinkle with sea salt. Use a cookie cutter to smooth out the edges.
