-8 oz orzo pasta
-3/4 cup chopped cherry tomatoes
-2 tbsp red wine vinegar
-1 tbsp avocado oil
-salt and pepper
-heaping 1/3 cup shaved parmesan cheese
-4 oz fresh mozzarella
-3/4 cup pesto
Drain and rinse pasta. Add pasta to bowl with tomatoes, then add pesto and cheese. Start with 1/2 cup pesto and add up to 1/4 cup more, if desired. Serve topped with extra cheese and fresh basil.
