ORZO WITH PESTO PASTA SALAD

-8 oz orzo pasta -3/4 cup chopped cherry tomatoes -2 tbsp red wine vinegar -1 tbsp avocado oil -salt and pepper -heaping 1/3 cup shaved parmesan cheese -4 oz fresh mozzarella -3/4 cup pesto

Cook the pasta according to package instructions, until al dente.

Marinate the tomatoes. Place chopped tomatoes in your serving bowl and add the red wine vinegar, oil and a sprinkle of salt and pepper. Stir. 

Make the pesto while you wait for the pasta to finish cooking and the tomatoes to marinate. (See full post for pesto recipe)

Drain and rinse pasta. Add pasta to bowl with tomatoes, then add pesto and cheese. Start with 1/2 cup pesto and add up to 1/4 cup more, if desired. Serve topped with extra cheese and fresh basil.
