Don't have oat flour? Fear not! Just make your own by placing plain rolled oats in a blender or food processor and blend until finely ground.
In a bowl, combine the dry ingredients with a whisk: oat flour, salt, baking powder and cinnamon (optional)
In a separate bowl, whisk together eggs, milk, vinegar, vanilla and oil until combined. Add the wet ingredient mixture to the dry mixture and whisk until combined. Allow batter to rest for 10 mins.
Heat waffle iron and pour batter onto it. Cook each waffle for 3-4 minutes. Enjoy right away with maple syrup and butter or freeze for later!
