MINT SYRUP

-1 cup granulated sugar -1 cup water -1 cup fresh mint leaves

Place all ingredients in a sauce pan over medium heat, stir occasionally and bring to a gentle boil. Reduce heat slightly and cook for about 15 minutes. Then turn off the heat and let steep for 30 minutes.

Strain syrup through a mesh colander to remove mint leaves and store in a jar in the fridge for up to 2 weeks.
