MINI EGG COOKIES

-3/4 cup unsalted butter (room temperature ) -1/2 cup brown sugar (loosely packed ) -1/2 cup sugar -1 egg (room temperature) -1 tsp vanilla extract -1/2 cup cocoa powder -1 1/2 cups all-purpose flour -1/2 tsp baking soda -1/2 tsp salt -1/2 cup semisweet chocolate chips -1 1/4 cup Cadbury mini eggs (chopped ) -sea salt for topping

Preheat oven to 375. Beat butter, sugar and brown sugar using an electric mixer on medium speed for about 5 minutes. Add egg and vanilla and beat again until combined.

Add cocoa, flour, baking soda and salt. Use a mixer to combine. Fold in chocolate chips and 1 cup chopped mini eggs. Reserve the rest for topping cookies before baking.

Use a cookie scoop to scoop 1.5 tbsp of dough per cookie and place on parchment lined baking sheet at least 2 inches apart.

Top each cookie with additional mini egg pieces then bake for 9-10 minutes. Top with sea salt immediately after removing from the oven.
