Heat a non-stick skillet over medium heat with an even coating of olive oil and add the bean mixture. Cook until all the liquid is gone and little crispy bits emerge throughout the mixture. Stir occaisionally.
Combine the following in a bowl and allow to marinate at least 15 minutes before serving:diced tomatoesonion thinly slicedcucumbersalt & pepperavocado oilred wine vinegarsugarparsley, mint & cilantro
