MEDITERRANEAN  RICE BOWL WITH LAZY FALAFEL

Place all ingredients in a blender and blend until smooth.

Heat a non-stick skillet over medium heat with an even coating of olive oil and add the bean mixture. Cook until all the liquid is gone and little crispy bits emerge throughout the mixture. Stir occaisionally.

Combine the following in a bowl and allow to marinate at least 15 minutes before serving: diced tomatoes onion thinly sliced cucumber salt & pepper avocado oil red wine vinegar sugar parsley, mint & cilantro

Serve falafel mash with rice, cucumber tomato salad and pita bread.
