Kumquat Jam

Slice kumquats and remove seeds

Place kumquats in a sauce pan with water and a cinnamon stick. Wrap seeds in cheese cloth and set overnight or 8 hours

Heat the mixture to a simmer and allow it to cook until it reaches 220F or it passes the gel test

Once gel has formed, place in sterilized jars and store in the refrigerator or process the jars for long term storage
