ITALIAN BAKED FISH WITH TOMATOES AND OLIVES

This recipe is super easy and healthy! Just preheat your oven to 375F. In an 8 x 8 baking dish, combine tomatoes, zucchini, lemon zest, lemon juice, olives, oregano, salt and pepper. Place cod fillets on top of the mixture and sprinkle with salt & pepper. Pour tomato mixture over the fish. Bake for 15-20 minutes, until internal temperature of 145F is reached. Enjoy!
