HOW TO MAKE SNACKING CHOCOLATE WITH KUMQUATS

-Dark chocolate -Roasted kumquats -Roasted pepitas -Sugar -Sea salt

First, roast pepitas & kumquats. Slice kumquats, picking out the seeds. Toss on a baking sheet with olive oil & salt. Bake for 25 min.

Place a sauce pan over medium-high heat. Fill with 1 inch of water and bring to a boil. Then reduce to a simmer. Place a smaller pot or stove-top safe bowl nestled inside the larger pot.  

Add chocolate to the small pot or bowl and stir until melted. Pour melted chocolate onto a parchment lined baking sheet in an even layer. 

Place kumquats in a bowl and sprinkle with sugar. Toss to coat.

Sprinkle with kumquats, pepitas and sea salt— pressing any kumquats down that might be protruding too much.

Place in fridge for at least 30 minutes for chocolate to set. Then cut or break into desired-size pieces.
