GREEK PASTA SALAD RECIPE

– 16 oz dried farfalle pasta – 1/2 red onion, grated – 1 1/2 cups cucumber, chopped – 1 cup cherry tomatoes, chopped – 6 oz feta cheese crumbles – 3/4 cup sliced kalamata olives – 1 cup parsley, measured then chopped – 1 lemon

DRESSING -2/3 cup avocado oil -1/3 cup red wine vinegar -1 1/2 tbsp honey -2 tsp garlic powder -1 tsp salt -1 tsp basil -1/2 tsp oregano -1/4 tsp black pepper

Cook pasta according to package instructions. Chop tomatoes, cucumber and parsley then add them to the other ingredients in a bowl.

Add dressing ingredients to a mason jar and shake vigorously

Allow cooked pasta to cool. before adding to the rest of the ingredients. Shake the dressing and pour over the salad. Juice the lemon over the finished salad. Mix and enjoy!
