GLUTEN-FREE PUMPKIN CHOCOLATE CHIP COOKIES

Use the classic cookie making method: beat butter and sugar, then eggs and vanilla (then add pumpkin puree). Next, add dry ingredients (gluten-free flour blend, oat flour, baking powder, baking soda, pumpkin spices) and stir in the chocolate chips at the end. Mix, then drop about 1 1/2 tablespoons of dough onto a cookie sheet and bake at 375F for about 9 mins.
