GLUTEN-FREE PEANUT BUTTER BROWNIES

-2 sticks butter, melted -3/4 cup coconut sugar -1 tsp vanilla -3 eggs -3/4 cup cocoa powder -1/2 cup oat flour -1 tsp baking powder -1/2 tsp salt -23 dark chocolate peanut butter cups (Trader Joe’s or Justin’s brand)

Melt the butter in a large microwave safe bowl. Once fully melted, add the sugar and vanilla. Whisk to combine. Add the eggs and whisk again until combined.

Add the dry ingredients: cocoa powder, oat flour, baking soda, and salt. Stir until fully combined.

Empty brownie batter into a greased 8 x 8 baking dish and bake for 25-30 minutes, until a toothpick inserted comes out clean.

Immediately upon removing the brownies from the oven, place *unwrapped* peanut butter cups on top of brownies. Return to the oven for about 3 minutes. Turn the oven off.

Remove the brownies from the oven and spread the peanut butter cups across the brownies using a rubber or off set spatula.
