Cut the figs in half and remove stems. Place them in a pot with sugar and water and stir.

Cook over medium heat until boiling and sugar is dissolved. About 5 minutes. Break up the figs with a spoon and continue to cook for another 5-8 minutes. Reduce heat to maintain a gentle boil.

Remove from heat and allow it to cool for at least 10 minutes. Then strain through a mesh sieve. Gently press the mixture through using the back of a spoon.
