FETA FRIED EGGS WITH FRESH HERBS  (VIRAL RECIPE)

-1/4 cup crumbled feta cheese  -2 large eggs -fresh parsley, chopped -fresh dill, chopped -pinch of black pepper -1 slice whole-grain toast (optional) -1/2 small avocado (optional)

Heat a non-stick skillet over medium heat. Sprinkle feta in an even layer, about the size that will take up two eggs if using a larger skillet. Allow it to cook 1-2 minutes so it can melt a little. 

Crack 2 eggs on top of the feta. Use a spatula to scoot the egg whites around a little and break that thick membrane. This just helps the eggs cook more evenly.

Cover the pan with a lid and cook until whites are set, about 3 more minutes, but check on them and you can cook them longer or shorter depending on your preference.

Transfer the eggs to a plate, sprinkle with fresh herbs and pepper.  Smash the avocado onto your toast and serve with your eggs. Enjoy!
