CHOCOLATE COVERED DATE BARS

– Medjool dates – Peanut butter – Walnuts – Dark chocolate – Sea salt

Pour hot water over the dates to soften them and make blending them a lot easier. It also helps you get a much smoother consistency.

Drain and add dates and peanut butter to a food processor or high-powered blender and blend until a smooth mixture forms. Add the chopped walnuts and stir.

Press the mixture into a baking pan to form an even layer. Line the pan with parchment for easier removal.

Chill the mixture in the freezer for 1 hr. Cut the bars into desired size and arrange on a baking sheet, lined with parchment paper. 

Just before it’s time to remove from freezer, place chocolate in a microwave safe bowl and heat until melted. Use a fork to lower each bar into the chocolate and flip to fully coat in chocolate.

Once all are covered in chocolate, place the baking tray in the fridge so chocolate can set. Chill for 30 minutes. Top with sea salt and enjoy.
