CHICKPEA AND BLACK BEAN SALAD RECIPE (BALELA SALAD)

– 2 15 oz cans chickpeas  – 1 15 os can black beans  -1/2 large yellow onion, diced  – 1 cup diced tomatoes – 1 cup fresh parsley  – 1/2 cup fresh cilantro  – 1 tbsp fresh mint  – 1/3 cup lemon juice – 1/3 cup avocado or canola oil – 1 tbsp red wine vinegar – 2 tsp garlic powder – 1 1/2 tsp salt – 1/2 tsp black pepper – 1/8 tsp cayenne powder – 1 tsp cumin

Chop tomatoes, onions and fresh herbs. Add all ingredients to a large mixing bowl.

Stir well and allow to marinate in the fridge for 30 minutes before serving.

WHAT TO EAT WITH CHICKPEA AND BLACK BEAN SALAD I either put it on top of rice or some mixed greens. I’ve also just thrown the salad into a wrap with brown rice, mixed greens and hummus (which is amazing!). It’s also good on a baked potato. You could even eat it with tortilla chips! Delicious additions include feta and avocado.
