BBQ CHICKEN QUESADILLAS

cilantro

flour tortillas

rotisserie chicken

frozen  corn

bbq sauce

shredded zucchini

cheddar cheese

Heat a griddle to 350F. In a small bowl, combine bbq sauce and chicken. Stir until chicken is fully coated with sauce.

Assemble the quesadillas. Spread about 1/2 cup cheese on one tortilla, leaving about 1 inch of space around the edge.

Top with bbq chicken, shredded zucchini, cilantro and corn. Top with another 1/2 cup cheese and another tortilla. Repeat with remaining ingredients.

Place quesadillas on hot griddle and cook 3-4 minutes on each side, until golden. Before flipping, flatten with the back of a spatula.
