BANANA SPLIT POPSICLES

-3 ripe bananas (about 1 cup mashed) -1 1/2 cups coconut cream (2 cans coconut milk- full fat) -1/4 cup coconut liquid (liquid in the can underneath the cream) -1/2 cup strawberries (optional) (chopped)

CHOCOLATE COATING & TOPPINGS -1 cup chocolate chips -1/3 cup coconut oil -1/4 cup chopped peanuts -1/4 cup maraschino cherries -2 tbsp sprinkles

Place cans of coconut milk in the fridge overnight. In a large bowl, mash bananas. Scoop out the solidified cream from the top of the cans and add to the bananas. Use an electric mixer to combine.   Stir in chopped strawberries.

Spoon mixture into popsicle molds. Place in the freezer for at least 4 1/2 hours.

Optional: Make chocolate shell - Place chocolate chips and coconut oil in the microwave for 1-2 minutes until melted. Dip popsicles in melted chocolate and sprinkle with desired toppings. Enjoy!
