Place cans of coconut milk in the fridge overnight. In a large bowl, mash bananas. Scoop out the solidified cream from the top of the cans and add to the bananas. Use an electric mixer to combine. Stir in chopped strawberries.
Spoon mixture into popsicle molds. Place in the freezer for at least 4 1/2 hours.
Optional: Make chocolate shell - Place chocolate chips and coconut oil in the microwave for 1-2 minutes until melted.
