Refreshing homemade watermelon mint popsicles with just four simple ingredients!

Ingredients

Units Scale
  • 6 cups watermelon (seedless, cut into chunks)
  • 1/4 cup lime juice
  • 1/4 cup mint syrup

Mint syrup

  • 1/2 cup sugar
  • 1/2 cup fresh mint leaves
  • 1/2 cup water

Instructions

  1. In a sauce pan, combine fresh mint, sugar and water. Cook over medium heat, stirring occasionally, until dissolved and the mixture begins to boil. Once it’s boiling, allow it to boil an additional minute then remove from heat. Allow this to steep with the mint leaves still in the pan for about 30 minutes.

  2. Place watermelon in a blender and blend until it becomes liquid.
  3. Strain the mint syrup to remove leaves.
  4. In a spouted bowl or large measuring cup, combine watermelon liquid, lime juice and 1/4 cup of the mint syrup. Taste and adjust if necessary.
  5. Pour the mixture into each mold. Place popsicles sticks, cover and freeze for at least 6 hours or overnight.

  6. To remove the popsicles, run under warm water and gently wiggle it out. If it doesn’t come out easily, place under warm water again.
