Watermelon Mint Popsicles With Lime

These watermelon mint popsicles are the perfect treat on a hot summer day! Crazy refreshing and easy to make—they will cool you off in no time.

Watermelon mint popsicles are going to get me through summer. It’s not even June and I already am looking forward to cooler weather. I like summer but I don’t like like summer anymore. Don’t get me wrong, I love beach days, long evenings and barbecues but I don’t like being hot and I really like wearing sweaters, etc. These popsicles are everything that is great about summer though. So refreshing and sooo easy to make. On a semi hot day, I ate one and felt at least 10 degrees cooler. I think I’m going to make it through guys.

How to make watermelon mint popsicles

Making popsicles at home is so easy, anyone can do it!

It only takes 4 ingredients and 3 simple steps

  • Watermelon
  • Fresh mint
  • Sugar
  • Limes

That’s it. Well, you will need a little water too but I don’t think that has to be included, right? Right. So how do we make these babies?

Step 1: How to make mint syrup

This stuff is the bomb diggity and I don’t say bomb diggity. The second I tasted it I thought of a million other places to use it. Okay maybe it was like five other things, but still. It was minty, sweet and refreshing and it got me excited. That’s always a good thing. Plus I don’t want to be chewing on mint leaves while eating my popsicle and this solves that problem.

To make the mint syrup, simply bring sugar, water and fresh mint leaves to a boil in a saucepan. Once the sugar is melted and the mixture is boiling let it continue to boil for an additional minute. Remove from heat and allow it to fully cool with the mint leaves still in the syrup.

Strain the leaves out and you’re good to go. The mint syrup recipe will give you a little more syrup than you will need, you can save the remaining in the fridge for up to four weeks, if you can make it last that long.

Step 2: Blend watermelon

There isn’t a lot to say on this front. Fresh watermelon goes into a blender and you push a button. We got this. I often just blend watermelon like this, strain it and drink it straight up. Not only is it delightfully refreshing, it can really soothe heartburn!

Step: Mix, pour & freeze

This part is the easiest of all, or maybe the hardest because you have to wait for the pops to freeze 🙂 But mixing and pouring into the mold = very easy.

At this point, you can taste the mixture and add more mint syrup if you want. The measurements I included here worked perfectly for me but follow your heart friend!

Popsicle mold

Now, you can’t make popsicles without a popsicle mold. Well, technically you can, but I really like using a mold. It makes things much easier. This is the one that I have and I love it! You can make ten popsicles at a time with this one, each piece comes apart so its easy to clean. I also like the little ridges on it which don’t add anything to the taste or function but I just like the way they look.

The funnest part! (Because you are about to eat a delicious popsicle). The metal top can get stuck if there is liquid touching it when you put it in the freezer. You can put the whole thing under warm water to loosen things up if you need to and remove the top.

Then just pop out each popsicle and run under hot water and the popsicle should slide right out! Enjoy guys!

Refreshing homemade watermelon mint popsicles with just four simple ingredients!

Ingredients

Units Scale
  • 6 cups watermelon (seedless, cut into chunks)
  • 1/4 cup lime juice
  • 1/4 cup mint syrup

Mint syrup

  • 1/2 cup sugar
  • 1/2 cup fresh mint leaves
  • 1/2 cup water

Instructions

  1. In a sauce pan, combine fresh mint, sugar and water. Cook over medium heat, stirring occasionally, until dissolved and the mixture begins to boil. Once it’s boiling, allow it to boil an additional minute then remove from heat. Allow this to steep with the mint leaves still in the pan for about 30 minutes.

  2. Place watermelon in a blender and blend until it becomes liquid.
  3. Strain the mint syrup to remove leaves.
  4. In a spouted bowl or large measuring cup, combine watermelon liquid, lime juice and 1/4 cup of the mint syrup. Taste and adjust if necessary.
  5. Pour the mixture into each mold. Place popsicles sticks, cover and freeze for at least 6 hours or overnight.

  6. To remove the popsicles, run under warm water and gently wiggle it out. If it doesn’t come out easily, place under warm water again.

    1. Hi there, I don’t have any recipes or experience specifically with creating recipes for diabetics. The only added sugar in these popsicles is the simple syrup, you could try using a sugar free alternative to make the syrup but I’m not sure how it would work as I don’t have experience cooking with sugar free products, might be worth a try though.
