Homemade Vanilla Bean Simple Syrup for Coffee
Vanilla Bean Syrup is perfect for making delicious vanilla bean lattes at home that are just as good as (or better than) a coffee shop! Made with just 3-4 simple ingredients in only a few minutes, you can’t go wrong.
This Vanilla Syrup is perfect for making homemade coffee and tea more fun (and popsicles!). I love the little flecks of real vanilla bean and of course, the true vanilla flavor. Like all simple syrups, this one is super easy and made with just a couple of ingredients. You’ll love it! It also makes a great homemade gift, especially in these adorable bottles I found on Amazon! Let’s make it!

Vanilla bean syrup ingredients
You can make this simple vanilla syrup without adding the vanilla extract, I just like adding it for an extra boost of vanilla flavor! And I like the color that it adds to the syrup.
- Whole vanilla pods – You can find vanilla beans at most grocery stores or on Amazon.
- Sugar – Any granulated white sugar, such as pure cane sugar or organic cane sugar, will do.
- Water
- Vanilla extract (optional)
How to make homemade vanilla bean syrup
Place the sugar, water and extract (if using) in a small saucepan. Make a slit down each vanilla bean pod and scrape the little vanilla bean seeds out with a knife and add them to the pot. Then add the pods.
Cook over medium heat until boiling and sugar is dissolved. Remove from heat and allow syrup to cool.
You can remove the vanilla beans before transferring to a jar or keep them in. I found these cute syrup bottles on Amazon!
Once you’ve allowed the syrup to cool to room temperature and transferred to a glass bottle, keep it in the fridge for up to 2 weeks.
How long does vanilla bean syrup last in the fridge?
This syrup will last two weeks in the fridge in an airtight container. Or less because you will be using it every day! 🙂
Make a vanilla latte with coffee
When I make lattes at home, I just make strong coffee or Cold Brew in a french press. It tastes just like espresso and is easier for me. I typically make them iced so I’ll share instructions on that:
- Add 4 tbsp ground coffee to the french press.
- Add 1/2 boiling water and steep for 5 minutes.
- Add 1/2 cup milk and 1-2 tbsp vanilla bean syrup.
- Add lots of ice and enjoy!
What else can I make with vanilla bean syrup?
There are so many uses for this rich simple syrup aside from adding it to your favorite coffee drinks. It’s great in everything from cold beverages like Vanilla Milk Tea and lemonades to cozy drinks such as hot chocolate, Vanilla Matcha Lattes, and even your morning coffee. You can use this simple syrup anywhere you would use maple syrup to add a delicious creamy flavor to things like Cherry Popsicles and ice cream. Add a splash to the egg mixture when making french toast in place of vanilla extract for a sweeter breakfast!
