Tuscan White Bean Salad

Even though we are just into August, it sort of feels like summer is coming to a close. But maybe that’s just because I made a pumpkin spice simple syrup the other day and it got me very excited for fall (stay tuned!). But regardless, I can’t let summer end without sharing this amazing Tuscan White Bean Salad. It’s the perfect summer meal or snack (read: no cooking required) and of course its DELICIOUS! Let’s make it!

Ingredients

Tuscan White Bean Salad

This recipe uses few ingredients but calls for super flavorful ones like sun-dried tomatoes, fresh garlic, parmesan cheese and lemon.

  • White beans (I use cannelini)
  • Sun-dried tomatoes
  • Onion
  • Fresh parsley
  • Fresh Basil
  • Lemon
  • Olive oil
  • Garlic
  • Shredded parmesan

This bean salad is so simple but has huge flavor. I love it. I’ve been eating it mostly for a hearty snack but you can definitely turn it in to a vegetarian meal. Try it over rice with roasted veggies or even on toast!

How to make this white bean salad

I love this salad for its simplicity! Just drain and rinse canned cannelini beans. Mince some onion and sun-dried tomatoes. Chop fresh parsley and basil and you are basically ready to mix everything up and enjoy! So easy. This is a small batch recipe, but can also be easily doubled or tripled if you want.

Just a little note about the garlic: I highly recommend grating it with a microplane (affiliate link) so you don’t get any large pieces of raw garlic. Microplanes are a super handy kitchen tool for last minute cheese grating on top of dishes, grating certain spices like nutmeg, and of course, garlic!

Ingredients

  • 1 14 oz can cannelini beans
  • 1/4 cup minced white or yellow onion
  • 2 tbsp chopped sun-dried tomatoes in oil
  • 1/2 cup fresh parsley, (measured, then chopped)
  • 1 tbsp chopped fresh basil
  • 1/2 tsp salt
  • 89 turns on a pepper mill (or to taste)
  • 1 clove garlic (grated)
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 cup shredded parmesan cheese

Instructions

  1. Combine all ingredients in a bowl and enjoy!
