Easy Turkey Pesto Wrap with Roasted Red Peppers

Want to mix up your turkey sandwich life? Try making a turkey pesto wrap for a lunch you’ll look forward to all morning. These are just as easy to throw together as a basic turkey sandwich! I’m also going to share my secret for the most flavorful wrap possible.

Recipe includes quantities for one wrap on a large burrito-sized tortilla. Multiply ingredients as needed.

Ingredients

  • 1 large tortilla, burrito-size
  • 1 1/2 tbsp mayo
  • 2 tbsp pesto
  • 2 slices havarti cheese
  • 7 thinly sliced turkey deli meat
  • 34 leaves romaine lettuce, thinly sliced
  • 12 tbsp thinly sliced red onion
  • 23 tbsp sliced roasted red bell pepper
  • 1 small avocado
  • avocado oil
  • pinch of sea salt
  • 1/2 fresh lemon, optional

Instructions

  1. Combine shredded lettuce and sliced red onion in a small bowl and drizzle with a small amount of avocado oil and a sprinkle of sea salt. Toss to coat and set aside. 
  2. Spread mayo and pesto in the middle of tortilla. Add cheese, turkey, bell pepper, turkey, then top with the lettuce and onion mixture. 
  3. Scoop avocado out onto top of everything and give a squeeze of lemon juice if desired. 
  4. Tuck the shorter ends of the wrap in and roll over one side. Use your hand to tuck the wrap fillings in as you roll if necessary. Slice in half if desired and serve with your favorite chips!
