Trail Mix Chocolate Bark

Trail mix bark = dark chocolate packed with trail mix-y type things like roasted pepitas, banana chips, raisins, peanut butter swirls, a dusting of flax and sea salt!

I meant to sprinkle mini chocolate chips into this trail mix chocolate bark but I forgot. Next time! I love making chocolate bark because it’s so easy and there is an endless amount of possibilities for flavor combinations. Plus its kind of healthy when you use dark chocolate with minimal sugar and pack it with healthy sorts of things like flax and pepitas.

The most important element when making chocolate bark is, um, the chocolate. Pick one that you love the taste of! I almost always use the Dark Chocolate Lovers from Traders Joes. They melt up beautifully and have a fruitiness that I quite like.

You can melt the chocolate in the microwave but I usually make a double boiler by placing a small saucepan over simmering water in a larger sauce pan.

Once the chocolate is melted, just pour it out onto parchment and use a rubber spatula to even out the chocolate. Then pack it with your toppings.

Because I was going with a trail mix theme I used:

  • 8 oz dark chocolate
  • Ground flaxseed
  • Banana chips
  • Golden raisin blend
  • Roasted pepitas
  • Peanut butter
  • Sea salt

I loved this combo, but as is with trail mix and chocolate bark, you can really add in whatever sounds good to you.

Letting the chocolate set

Once you’ve added your toppings to the chocolate you can allow it to set at room temperature until hardened (this will take a couple of hours) or place it in the fridge for about 20 minutes. I like the 20 minutes method! Then, either cut the bark into desired sized pieces or break into pieces with your hands.

Storing chocolate bark

If you aren’t serving chocolate bark immediately, place in an airtight container once cooled. I keep mine in the fridge to discourage any re-melting which can cause discoloration.
