Thyme Simple Syrup

Thyme Simple Syrup is a great way to use up extra herbs or even a great reason to buy herbs! It’s a tasty, sweet, herbaceous way to liven up drinks like lemonade, tea or cocktails. Thyme even has medicinal properties and is often used to treat respiratory ailments! You only need 3 ingredients and 15 minutes to make it!

If you’ve wondered what to do with thyme besides adding to roasted potatoes and meats, you will want to try this simple syrup recipe. It adds a fun, unexpected (in a good way) herby taste to drinks and is the perfect way to use up extra thyme. Let’s make it!

We all love a good 3-ingredient recipe, don’t we? All you need to make this simple syrup is: fresh thyme, granulated sugar and water.

How to make thyme simple syrup

Once you’ve made one simple syrup you can make them all! To make this, just combine all ingredients in a small pot over medium heat.

As soon as the mixture boils and the sugar is dissolved, remove from the heat.

Allow the syrup to cool for about 30 minutes with the thyme still the pot so it can further infuse the syrup.

Then strain out the thyme and store syrup in an airtight jar in the refrigerator for up to 2 weeks.

How to use thyme syrup

Thyme adds a delicate herb flavor that is somehow earthy and fresh at the same time. If you have extra thyme (pun!) this syrup is a great way to use it up/extend its life before it goes bad. It can go well in so many drinks!

Cocktails

Add a couple of tablespoons to a cocktail. Many herb-infused cocktails call for soaking the herbs in the alcohol to impart flavor and many cocktail recipes call for regular simple syrup. Try using thyme simple syrup instead by replacing regular simple syrup at a 1:1 ratio and skipping the long herb-soak in the alcohol.

Lemonade

Try adding it to lemonade! Thyme and lemon go great together in savory dishes but they also go great in a tart + sweet lemonade. It is a refreshing twist on lemonade, plus thyme imparts some extra health benefits!

Hot or iced tea

Hot or iced tea is a great way to use this syrup. Just stir in the desired amount to hot tea for a comforting, warm beverage. I like it in ginger lemon tea! You can also try adding this to iced tea of course. Iced ginger lemon tea would work great here too.

Herbed soda

For a light + fresh soda, try adding some to club soda with ice for a refreshing herb tonic!

Instructions

  1. Add the sugar, water and fresh thyme to a small pot over medium high heat.

  3. Remove from heat and allow the syrup to cool for 30 minutes before removing thyme springs and placing in an airtight jar.
