Ingredients

1/3cup yellow onion (chopped small)
1 1/2 tbsp avocado oil
2 tsp red wine vinegar
1/4 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
1/3cup mayonnaise
1 tbsp honey mustard
2 tsp fresh dill (chopped)
zest from one lemon
2cups shredded chicken
Instructions
Add the chopped onions to a mixing bowl. Then add avocado oil, red wine vinegar, salt, pepper, sugar and lemon zest and mix with the onions. Allow to stand at least 5 minutes.
Add remaining ingredients to the onion mixture and stir to combine.
Enjoy on toasted wheat bread with tomatoes and lettuce or over a salad of mixed greens with crackers.
