I’ve mentioned before that I hated mayonnaise growing up. So chicken salad is not something I ever even tasted until adulthood. Boy was I missing out. I love the simplicity of chicken salad (And egg salad!). Chicken breast, mayonnaise, onions and a few additional seasonings and you’ve got a simple and delicious lunch or dinner. And I’m going to let you in on a little secret to making the most mouth-watering chicken salad you’ve ever had. Let’s make it!
Ingredients for the best chicken salad
- Shredded chicken: I typically pick up a rotisserie chicken from the store when I want to make chicken salad. They are always perfectly cooked and it’s just a nice convenience to not have to deal with raw chicken. But you can certainly cooked your own. Just season it simply with salt and pepper, shred it and allow it to cool before putting everything together.
- Onions: Yellow onions are my favorite but any onion will work. My secret to making the best chicken salad lies in how we handle the onions and no matter what type you choose, the trick will work.
- Mayonnaise: my favorite mayonnaise and really the only kind I will eat is Sir Kensington’s. It’s creamy, doesn’t have that unappealing, jiggly texture most mayos have and the flavor is superior to any other I’ve had. It’s worth the extra $$.
- Honey Mustard: Just a touch of honey mustard for flavor. You hardly know it’s there but it makes a difference!
- Vinegar
- Oil
- Salt
- Pepper
- Sugar
- Fresh dill
The secret to making the best chicken salad
Are you ready for it? All you have to do to make the best chicken salad is marinate the onions! Marinate the chopped onions in vinegar, oil, salt, sugar and pepper while you shred the chicken. This takes the edge off of the pungency of the onions and makes for a perfectly seasoned chicken salad.
In a medium-sized mixing bowl, add the chopped onions, then the vinegar, oil, salt, pepper, sugar and lemon zest.
Then add the shredded chicken and mix.
Enjoy on toasted wheat bread with butter lettuce and tomatoes. So good!

Ingredients
- 1/3 cup yellow onion (chopped small)
- 1 1/2 tbsp avocado oil
- 2 tsp red wine vinegar
- 1/4 tsp sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/3 cup mayonnaise
- 1 tbsp honey mustard
- 2 tsp fresh dill (chopped)
- zest from one lemon
- 2 cups shredded chicken
Instructions
- Add the chopped onions to a mixing bowl. Then add avocado oil, red wine vinegar, salt, pepper, sugar and lemon zest and mix with the onions. Allow to stand at least 5 minutes.
- Add remaining ingredients to the onion mixture and stir to combine.
- Enjoy on toasted wheat bread with tomatoes and lettuce or over a salad of mixed greens with crackers.
