Sweet and Salty Chex Mix with Ruby Chocolate
A sweet and salty Chex mix with cinnamon sugar pretzels, Chex mix and popcorn all tied together with dark chocolate and ruby chocolate.

I’ve recently shared a couple of recipes with ruby chocolate after happening upon these beautiful pink chocolate chips at Sprouts. Ruby chocolate has a sweet, sorta tart taste with a very smooth/creamy texture. A snack mix seemed like a fun way to use my last bit of ruby chips and it was!

WHAT IS RUBY CHOCOLATE?
At first glance, it may not look like chocolate but ruby chocolate is actually made from cocoa beans so it is a type of chocolate. It’s newly developed, compared to regular chocolate, and doesn’t seem to be super common yet. But I was able to find ruby chips at Sprouts Market which might be an indicator that it’s making its way into the mainstream.
WHAT DOES RUBY CHOCOLATE TASTE LIKE?
Ruby chocolate has a distinct fruity taste. It’s slightly tart, and reminds me of raspberries. It’s texture is extremely smooth, similar to white chocolate. It melts easily and makes a great addition to lots of baked goods and treats.

- Butter
- Brown sugar
- Vanilla
- Salt
- Cinnamon
- Corn chex cereal
- Mini pretzel twists
- Salted peanuts
- Salted popcorn
- Dark chocolate (chopped)
- Ruby chocolate chips

Sweet and Salty Chex Mix with Ruby Chocolate
Snack mix that’s sweet and salty with all kinds of crunch!

Ingredients
- 1/4 cup butter
- 1/4 cup brown sugar
- 1 tsp vanilla
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 2 cups corn chex cereal
- 2 cups mini pretzel twists
- 1 cup salted peanuts
- 2 cups salted popcorn
- 1/2 cup dark chocolate (chopped)
- 3/4 cup ruby chocolate chips
Instructions
- Preheat oven to 300.
- In a small saucepan over medium heat, combine butter, brown sugar, vanilla, salt and cinnamon. Cook until butter is melted and sugar begins to dissolve. Remove from heat.
- Add Chex cereal and pretzels to a large bowl, pour the (cooled) butter mixture over the cereal and pretzels and stir until evenly coated. Spread on a parchment lined baking sheet in an even layer and bake for 25 minutes, stirring halfway through.
- Allow the pretzels and cereal to cool, then mix with the peanuts, popcorn and chocolate.
