In a large bowl, add parsley, red onion, garlic, ginger, apricot jam, curry, paprika, pepper, salt, olive oil and ground turkey. Mix with clean hands until ingredients are fully combined. Separate into four patties. Make them flatter and larger than you think they should be. They will shrink and puff up as they cook.
Heat a large cast iron skillet or non-stick skillet over medium heat. Spray with non-stick spray or lightly coat with oil. Cook turkey burgers for 6-9 minutes on each side, or until the internal temperature reaches 165˚.
Serve burgers on brioche buns with pickled onions, lettuce, tomato and mayo.
