Ingredients
Sunflower seed butter cups
- Chocolate – I like using dark chocolate but milk chocolate works just as well
- SunButter/Sunflower seed butter – If you’d like to cut down on the sugar, try the Sunbutter brand Natural. Trader Joe’s Sunflower Seed Spread has powdered sugar added already.
- Honey
- Sea salt – I love adding a pinch of salt to almost any sweet treat to give it that wow factor.
Where can I find sunflower seed butter?
I usually get my sunflower seed butter at Trader Joe’s or Whole Foods, but a lot of grocery stores carry it in the nut butter section. You can also find it on Amazon.
Does sunflower seed butter taste good?
I think so! If you can’t have peanut or other nut butters, this is a good alternative. If you don’t like the taste of sunflower seeds you might not enjoy it. It’s super smooth and you can buy it sweetened or unsweetened. I like to get unsweetened so I can control the amount and the type of sugar that I use.
What kind of chocolate should I use?
I used the Pound Plus dark chocolate bar from Trader Joe’s. It’s 72% cacao dark chocolate, so it’s on the less sweet side (its first ingredient is unsweetened chocolate). For the recipe as written, I used half of the bar. I recommend going with something like this rather than chocolate chips but you can use chocolate chips if you need to.
How to make Sunflower Seed Butter Cups
Mix sunflower seed butter and honey
Mix sunflower seed butter and honey in a small bowl until combined. You can also use powdered sugar instead of honey.
Melt chocolate
Chop the chocolate and melt in the microwave until smooth (make sure to use a microwave-safe container!)
Add chocolate and sunbutter layer
Place cupcake liners in a cupcake baking pan, then add dark chocolate to each liner. Next, add the sunflower seed butter/honey mixture. It doesn’t have to look perfect; it’s getting covered with chocolate anyway! Just try to spread it around as evenly as you can.
Add the top layer of chocolate
Add more melted chocolate to the top of each cup! Use the back of a spoon to smooth it out.
Set & enjoy!
Place the cupcake pan in the fridge for about 1 hour to set, then store at room temperature. Enjoy!
These sunbutter cups are so good and so easy to make, I know you’ll love them! If you are looking for peanut butter instead of sunflower butter, try these dark chocolate peanut butter cups!
