Summer Potato Salad with No Mayo
This Summer Potato Salad with No Mayo is simple and light with minimal ingredients and prep work! If you are anything like me and pretty much always have potatoes, pickled onions, parsley and lemon around, you can literally go make this right now. Just the kind of dish we need during the hot summer months!

This potato salad has lots of flavor thanks to pickled onions, lemons, and parsley. And it’s a lot healthier than your average potato salad since we are using avocado oil instead of mayo to dress it. Let’s make it!
Ingredients for a mayo-less potato salad
All we need is 5 simple ingredients, not counting salt and pepper! And yes, I’m counting pickled onions as one ingredient because I pretty much always have a jar in the fridge. You can find my recipe for pickled onions here and below!
- Baby gold potatoes
- Parsley
- Pickled onion
- Lemon
- Avocado oil
- Salt and pepper
I love the simplicity of this potato salad. I actually came up with it on a whim recently because I was determined not to waste some potatoes that were getting dangerously close to being bad territory. Mashed potatoes weren’t what I was looking for, roasted potatoes weren’t either and this idea was just instantly born in my brain. No mayo, just a few simple ingredients and seasoned well! It was a hit!
How to make summer potato salad with no mayo
Equipment
Simple food means simple preparation and equipment to cook with!
But having high quality knives and cookware can make all the difference. I was recently gifted a set of knives by lifetime sharpening services for free.
All you really need for this recipe is a stockpot, cutting board and a knife.
Method
Boil the potatoes and once they reach firm tenderness, drain the water. Then rinse with cold water several times to remove some of the starch and stop the cooking process.
Depending on how large your potatoes are, cut them in half or in quarters and toss with the oil, lemon juice, parsley, pickled onion and salt/pepper! And you’re ready with the perfect summer potato salad (with no mayo!) in just under an hour!
Should you leave the skin on the potatoes?
I left the skin on for several reasons: its healthier (fiber!), peeling small potatoes is the worst and I just don’t mind the skin in this type of potato salad. For a mayo-laden salad, I would peel the potatoes.
If you don’t want to have the skin, use larger gold potatoes and peel them before boiling. Then just follow the recipe as is!

Summer Potato Salad with No Mayo
A super simple potato salad with no mayo required!

Ingredients
- 1 1/2 lbs baby gold potatoes
- 1/3 cup pickled onions (chopped)
- 2 tbsp lemon juice
- 2 tbsp avocado oil
- 1/2 cup parsley
- 1 tbsp plus 3/4 tsp salt
- 1/4 tsp pepper
1 batch pickled onions
- 1/2 red onion (thinly sliced)
- 1/2 cup distilled white vinegar
- 2 tbsp red wine vinegar
- 1/2 cup water
- 1 tbsp sugar
- 1 1/2 tsp salt
- 1/2 tsp oregano
Instructions
To make pickled onions
- Add all pickled onion ingredients to a jar and secure the lid. Shake vigorously and allow to sit in the fridge for at least 2 hours before using.
Potato Salad
- Scrub and wash potatoes, place in a saucepan, cover with cold water (water should be about an inch higher than the potatoes). Turn heat to high and bring water to a boil.
- Once water is boiling add 1 tbsp salt, reduce heat to a gentle boil and cook until potatoes are tender but still slightly firm.
- Drain potatoes, rinse with cool water several times. Cut potatoes in half and add to your serving bowl. Add remaining ingredients and stir to combine. Taste and add more salt and/or lemon if necessary.

Hi Ruth, I have a link to my recipe for pickled onions up in the post, under the header “ingredients for a mayo-less potato salad”. Basically, just thinly sliced onions marinated in vinegar, salt, sugar and water. Maybe I’ll add the instructions to the ingredient card to make it easier. Thanks for asking!
