Strawberry Rice Krispie Treats

Try these Strawberry Rice Krispie Treats for a fun and fruity twist on a classic treat!

These pretty pink rice krispie treats are my favorite twist on this classic treat! They are no-bake which we know I love. They are gluten-free, ready quickly and fun to make. Oh and they are perfect for Valentine’s Day too! Let’s make them!

Ingredients

Strawberry Rice Krispie Treats

The only deviation from a regular rice krispie treat recipe is the freeze-dried strawberries. Then we just need rice krispie cereal, marshmallows, butter, vanilla and salt. I get my freeze-dried strawberries from Trader Joe’s!

  • Rice krispie cereal or any “crispy rice cereal”
  • Marshmallows
  • Butter
  • Vanilla
  • Freeze-dried strawberries
  • Salt

How to make strawberry rice krispie treats

Step 1

Blitz the freeze-dried strawberries in a blender until a powdery consistency is reached. Measure out the cereal into a large mixing bowl and add the strawberry powder. You want the cereal ready to dump into the melty marshmallow/butter mixture we’ll talk about in the next steps.

Step 2

Melt the butter in a large stock pot over medium-low heat. Add the marshmallows and stir constantly until melted. Remove from heat.

Step 3

Add vanilla and the rice krispie/strawberry powder mixture and stir until the cereal is fully coated with the marshmallow mixture. A rubber spatula works best here!

Step 4

Spread the mixture into a greased baking dish and press down firmly with your hands (it helps to grease your hands a bit too).

Step 5

Allow krispie treats to cool before cutting into bars and eating! And don’t forget a little sprinkle of sea salt (affiliate link)!

My favorite twist on rice krispie treats is this simple addition of freeze-dried strawberries! With a sprinkle of sea salt, these are divine.

Ingredients

  • 1 1/2 cup freeze-dried strawberries
  • 4 1/2 cup rice krispie cereal
  • 5 cup marshmallows, (mini are best but use what you have!)
  • 4 tbsp unsalted butter
  • 1 tsp vanilla extract
  • sea salt for topping (optional)

Instructions

  1. Grease a 9 x 13 inch baking dish with butter (see note).
  2. Pulse freeze-dried strawberries in a blender until a powdery consistency develops. A few small lumps are okay. Add the cereal to a large mixing bowl with the strawberry powder and set aside.

  3. Melt butter in a large stock pot over medium-low heat. Add the marshmallows and stir constantly until fully melted. Remove from heat. Add vanilla, then cereal/strawberry powder mixture and mix gently with a rubber spatula until combined.

  4. Scrape the mixture into the baking dish and press firmly with (greased) hands until even.

  5. Allow to cool before sprinkling with sea salt and cutting into bars.

Notes

Baking dish: 9 x 13 will yield a somewhat thin rice krispie treat, if you want thicker treats, feel free to use a smaller baking dish! This will of course, yield a smaller amount. 

Marshmallows: yes, mini are best, but as you can see in the photos above regular size are sometimes all you’ve got. Use them! It still works 🙂
