Chocolate Covered Strawberry Rice Crispy Treats

A tasty twist on a classic—perfect strawberry rice crispy treats made with freeze-dried strawberries and dipped in chocolate. They’re so yummy!

I love plain old rice crispy treats but chocolate covered strawberry rice crispy treats—I love love them. Plus, this recipe uses freeze-dried strawberries so you get some actual fruit in with your dessert which can’t be bad. Let’s see how it’s done!

Ingredients for chocolate covered strawberry rice crispy treats

Rice crispy treats are not only delightfully tasty, they are delightfully simple to make. This chocolate/strawberry version is scarcely any different from a basic recipe. All you need is:

  • crispy rice cereal
  • marshmallows
  • butter
  • dark chocolate/chocolate chips work too
  • sea salt

How to make strawberry rice crispy treats

Just melt butter, then add the marshmallows and stir until the marshmallows are fully melted.

Get that Strawberry Flavor

Turn the strawberries into in magic strawberry flavored dust by pulsing them in a blender. Pulse rather than just full speed, non-stop blending to discourage clumping. Some blenders create quite a bit of heat and this could make the dust clump up. About 10 pulses should work but pulse until no large lumps remain.

Now Put it all together!

Mix the dust with the cereal then mix into the large pot where you melted the butter and marshmallows. Press firmly into a greased baking dish, line with wax paper too if you have it. We want zero chances of stickage.

Dip if you desire

Honestly, these are great just like this but they are also really great dipped in chocolate. If you want to dip, just melt chocolate chips or chopped dark chocolate in the microwave with coconut oil until fully melted and dippable. That’s a word, right?

Dip, and hold over the bowl to let any excess drip off. Place on parchment or wax paper and allow them to set. You can put them in the fridge if you want to speed things up.

Ingredients

  • 4 tbsp unsalted butter
  • 4 cups crispy rice cereal
  • 5 cups mini marshmallows
  • 1 tsp vanilla
  • 3 cups freeze-dried strawberries
  • 1/2 tsp sea salt, plus more for topping
  • 1 1/2 cups chocolate chips
  • 2 tsp coconut oil

Instructions

  1. Pulse the freeze-dried strawberries in a blender until no large lumps remain. Mix with rice crispy cereal.
  2. Melt butter in a large pot over low heat. Add marshmallows and cook (stirring constantly) until fully melted.
  3. Once melted, remove from heat, add vanilla, 1/2 tsp salt and cereal/strawberry dust and stir until fully coated. Press into a 9 x 13, buttered pan lined with wax paper.
  4. Allow to cool fully before slicing into desired sized pieces.
  5. Place chocolate chips in a microwave safe bowl and microwave for 30 second intervals until fully melted. Stir at each interval. When the chips are almost fully melted, or before the last microwave interval, add the coconut oil.
  6. Tilt the bowl to make a deeper pool of chocolate to dip the rice crispy squares into. Dip each square partially in the chocolate, allow excess to drip back into the bowl and place the crispy treat on a piece of wax paper or parchment. Sprinkle with sea salt and sprinkles if desired.
  7. Enjoy!

Notes

I got the 2 oz bag of freeze-dried strawberries from target that is linked above. This left me with about an extra cup of strawberries after making these
