Units Scale

Strawberry Syrup

  • 8 oz strawberries, hulled and halved, about 1 1/2 cups
  • 2/3 cup granulated sugar
  • 1/2 cup water

Bubble Tea for 1 serving

  • 2 black or green tea bags
  • 1 cup boiling water, plus more for making the boba
  • 34 tbsp strawberry syrup
  • 1/4 cup boba
  • ice
  • milk to taste

Instructions

  1. Combine strawberries 1/2 cup water and sugar in a pot, stir and place over medium heat.
  2. Bring to a boil and begin to smash the strawberries with a potato masher or a fork, cook for an additional 3-4 minutes after reaching a boil then remove from heat.
  3. Strain the strawberry syrup through a mesh sieve into a large measuring cup with a spout. Allow to cool then transfer to a jar for storage.

Tea recipe

  1. Steep tea bags in 1 cup boiling water for 5 minutes, remove tea bags.
  2. While the tea steeps, add the boba to a small pot and cover with water by about an inch. Bring to a boil and cook until the boba float. Then strain out the water.
  3. Add desired amount of strawberry syrup to the tea (3-4 tbsp is what I use). Then add the boba.
  4. Fill drinking glass with ice and pour tea over the ice.
  5. If you want to add milk, add it before pouring over ice. I add 1/4 – 1/3 cup of whole milk to mine.
  6. Garnish with fresh mint and more strawberries if desired.
  7. Enjoy!
