Simple Nectarine Tart (10 minute prep)

A simple nectarine tart to enjoy the summer bounty. This tart takes just ten minutes of prep and a few very simple ingredients.

Hola, friends! This nectarine tart is barely a recipe, more of an idea that you can customize to your liking. I’ve been getting nectarines from Trader Joe’s for the past few weeks and they have been absolutely amazing. Perfectly ripe and so juicy. I knew I had to do something with them and something that wouldn’t take away from their perfect flavor. Solution: throw them on a sheet of puff pastry and bake the whole thing. It turned out to be a highly acceptable solution.

INGREDIENTS FOR NECTARINE TART

  • 1 sheet puff pastry (thawed)
  • 3 nectarines (sliced)
  • 1 tsp fresh ginger (grated)
  • 1/4 cup brown sugar
  • 1 tbsp butter (optional)
  • 1 egg (optional)
  • 1 tbsp milk (optional)

Using store bought puff pastry for an easy tart

You can make your own puff pastry and someday I would like to try it but this was not the day. Also I don’t think summer is the time to mess around with it either. I’m thinking of butter getting too soft and me getting too sweaty working it into the dough. So no shame in using store-bought. There are a ton of easy recipes you can make with store-bought dough as well, like these Puff Pastry Tomato Tarts!

Just make sure its thawed before you try working with it. About 30-45 minutes should do it.

Making the nectarine tart

For one sheet of puff pastry you will need three nectarines. Slice the nectarines and place them in a bowl. Toss with brown sugar and freshly grated ginger for a little zing and you’re ready to arrange the slices on top of the pastry.

Fold the edges of the pastry in around the fruit in a visually pleasing fashion. Simply fold them over however you can get them to stick. It’s a rustic sort of dessert. If desired, dot fruit with butter and brush edges of pastry with egg wash (whisk together egg and milk). This will give the edges a nice golden brown look and will make your tart more crispy.

While I am including a recipe for this, feel free to customize! Use a different fruit, use white sugar or coconut sugar. Add cinnamon instead or in addition. Your options are many!

Nectarine Tart with a Scoop of Vanilla Ice Cream

  • 1 sheet puff pastry (thawed)
  • 3 nectarines (sliced)
  • 1 tsp fresh ginger (grated )
  • 1/4 cup brown sugar

Optional

  • 1 tbsp butter
  • 1 egg
  • 1 tbsp milk
  • whipped cream or vanilla ice cream (for serving)

Instructions

  1. Preheat oven to 400F.
  2. Allow puff pastry to thaw if frozen and place on a baking sheet lined with parchment.
  3. Toss nectarine slices in a bowl with ginger and brown sugar. Arrange slices on top of puff pastry, leaving about a 1 1/2 inch edge. Fold edges in around the fruit to form a square.
  4. If desired, dot fruit with butter and brush edges of pastry with egg wash (whisk together egg and milk).
  5. Bake for 25-30 minutes, until pastry is golden and fruit is bubbly.
  6. Enjoy with whipped cream or vanilla ice cream while warm.
