Ruby Chocolate Chip Cookies
Trying out the newest chocolate on the block—ruby chocolate—in these ruby chocolate chip cookies!
When I first saw ruby chocolate, I thought maybe it was just a flavored white chocolate but ruby chocolate is actually its own classification of chocolate! It was first introduced to the market in 2017 by a Belgian-Swiss chocolate company. So it’s relatively new! I saw a bag of ruby chocolate chips in the bulk bins at sprouts and I just had to grab a bag. I decided to use them in the most classic format for chocolate chips—ruby chocolate chip cookies!

What is ruby chocolate?
Is ruby chocolate actually chocolate?
From the research I’ve done, this is what I learned: Ruby chocolate is made from ruby cocoa beans which are certain cocoa bean varieties with “particular attributes required to make ruby chocolate”. Sounds pretty vague to me. But I guess that’s partly because the actual production method is still a trade secret. However, apparently there are cocoa beans from Brazil that have a natural pink color when unfermented and its speculated that ruby chocolate is made from these beans.
While I love chocolate and sometimes can be a bit of a snob about it, I don’t usually look into how/where it’s made. I just want it to taste good.
What does ruby chocolate taste like?
When thinking of how to describe the taste of ruby chocolate, the first thing that comes to my mind is fruity. It’s slightly tart and sweet and creamy in the way that white chocolate is sweet and creamy. Sometimes I get a whisper of cocoa at the end but I’m not sure if that’s just the power of suggestion in my own mind. I’ve seen other descriptions of the taste of ruby chocolate as raspberry and white chocolate or berries and cream and I agree with those assessments. The texture of ruby chocolate is pretty similar to white chocolate, very smooth and creamy.

- Unsalted butter
- Brown sugar and regular sugar
- Egg
- Vanilla
- All-purpose flour
- Baking soda
- Salt
- Cinnamon, not picture and optional but very tasty
How to make ruby chocolate chip cookies
I am using just a basic cookie dough here– the one I use for my chocolate chip cookies. But I’m adding ruby chocolate chips of course and, wait for it……cinnamon! Cinnamon goes so nicely with the fruitiness of the ruby chocolate. It’s definitely optional but it’s a very nice addition if you have it.
Start by beating the butter and sugar with an electric mixer until light and fluffy. Then add the egg and vanilla and beat again.
After you’ve added the dry ingredients and ruby chocolate chips, you’re ready to scoop and drop onto your baking sheet! Using a cookie scoop (affiliate link) helps ensure even cookies!
Where to buy ruby chocolate
I haven’t seen ruby chocolate in regular chain grocery stores, aside from sprouts, where I got mine. The chips I got at sprouts were just in the bulk bins so I don’t know what brand they are but it looks like amazon (affiliate link) carries a few well known brands that make ruby chocolate.

Ingredients
- 3/4 cup unsalted butter, 1 1/2 sticks (room temperature)
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg (room temperature)
- 1 tsp vanilla
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon (optional )
- 1 1/3 cup ruby chocolate chips
Instructions
- Preheat oven to 375.
- In a medium mixing bowl, combine flour, salt, baking soda and cinnamon (if using). Set aside.
- Add butter, sugar and brown sugar to a large mixing bowl and beat with an electric mixer until fluffy, about 5 minutes.
- Add egg and vanilla and beat again until combined.
- Add the dry ingredients and continue using the electric mixer until all ingredients are fully combined.
- Stir in 1 cup of ruby chocolate chips.
- Line baking sheet(s) with parchment paper and use a cookie scoop to drop 1.5 tbsp balls of dough onto the cookie sheet. Leave at least 3 inches of space between each cookie. Press extra ruby chips into the top of each dough ball using remaking 1/3 cup of chips if desired. You can also just mix them all straight into the dough.
- Bake for 9-10 minutes, until golden brown on the edges. Top with sea salt and transfer to a wire rack to cool.
