Red Wine Shallot Vinaigrette

This Red Wine Shallot Vinaigrette is my go-to. With perfectly balanced acidity and delicious flavor, it will make you look forward to salad!

I just love this dressing! It took me a while to finally get the right ratio of acid/oil/sweetness but I think I’ve hit the mark and I’m not changing it. The great thing about this vinaigrette is you can change it up to suit different styles of recipes. You can swap out some of the red wine vinegar with lemon or orange juice, you can even leave out the shallot and herbs and still have a very tasty dressing. But after all this post is for a red wine shallot vinaigrette, so we will focus on that. Let’s make it!

Ingredients

Red wine shallot vinaigrette

  • Oil
  • Red wine vinegar
  • Honey
  • Shallot
  • Fresh herbs
  • Garlic powder
  • Salt and pepper

For the oil, make sure to use a neutral tasting one like avocado or sunflower. You have some freedom with the fresh herbs, my favorite combination is parsley, basil and dill. I will include some measurements for that, but feel free to experiment.

How to make red wine shallot vinaigrette

Dice shallot

Dice shallot as fine as you can and set aside. Pro tip: just place them in a jar after dicing so you can add all the other ingredients and shake!

Chop fresh herbs

My Aerogarden makes it easy to add fresh herbs to so many recipes! I like using parsley, mint and dill in this dressing but you can try other herb combinations if you like.

Shake it up

Now all that’s left yo do is place all of the ingredients in a jar and shake! If you don’t have a jar you can use any container with a small lid or you can just whisk vigorously in a bowl.

How long does homemade dressing last?

Store this in the fridge and enjoy for up to two weeks.

Ingredients

  • 2/3 cup sunflower oil
  • 1/3 cup red wine vinegar
  • 1 tbsp honey
  • 2 tbsp shallot (minced)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp garlic powder
  • 2 tbsp fresh parsley (optional)
  • 1 tbsp fresh mint (optional)
  • 2 tsp fresh dill (optional)

Instructions

  1. Place all ingredients in a jar and shake vigorously. Dressing will separate as it sits, so you will need to shake before each use.

Notes

Substitutions & Omissions

Feel free to sub in other fresh herbs like chives, basil, tarragon, etc. Or you can leave the herbs out entirely.

You can also actually omit the shallots too and still have a delicious vinaigrette. 

Not a huge garlic fan? Reduce garlic powder to 1/2 tsp for more subtle garlic flavor.
