Pumpkin Spice Iced Coffee

  • 3/4 cup your favorite bottled iced coffee
  • 1/3 cup milk of choice, I like 2 % or oat milk
  • 2 tbsp pumpkin spice simple syrup or to taste

Pumpkin Spice Simple Syrup

  • 1 1/2 cup brown sugar
  • 1 1/2 cup water
  • 1 cup canned pumpkin puree
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves

Instructions

Pumpkin Spice Simple Syrup

  1. Combine all syrup ingredients in a pot over medium heat and whisk till combined.

  2. Cook the mixture until bubbling. Reduce heat to maintain a gentle boil and cook for about 5 minutes.

  3. Strain the mixture through a mesh sieve if desired (I usually don't). Store this in a glass jar or bottle in the fridge and enjoy for up to one week. This is also very yummy drizzling over ice cream.

Pumpkin Spice Iced Coffee

  1. In a glass bottle or jar, combine iced coffee, milk, pumpkin spice syrup and ice. Shake to combine. Enjoy!

Notes

To make one serving iced coffee from scratch – the key is to brew an extra strong cup with minimal water. I usually do 4 tbsp ground coffee with 1/2 cup water. I use a french press and brew the coffee for about 4 minutes. Add the pumpkin spice syrup while its hot, then add the milk to cool it down before adding the ice. Use lots of ice and your set!
