Pumpkin Spice Iced Coffee
Pumpkin Spice Iced Coffee is the perfect way to ease into the fall season! It keeps you cool for those still-warm afternoons but stirs up excitement for fall. Make this drink with coffee, your choice of milk and my super easy pumpkin spice simple syrup!
I like my pumpkin spice stuff in small doses and this Pumpkin Spice Iced Coffee is the perfect vehicle. I make an easy simple syrup and just use my favorite pre-made bottled iced coffee. You can totally make your own iced coffee (or cold brew the night before) or quickly brew super strong hot coffee to use for this if you want (instructions in the notes section). And you can even take it a step further and make Pumpkin Cold Foam! Let’s make it!

Ingredients
Pumpkin spice iced coffee
- Your favorite unsweetened, pre-made iced coffee or cold brew. I like Stok, all their blends are great! If you’re feeling like making your own, this method of making cold brew is wayyy better than store-bought.
- Milk, feel free to use a non-dairy milk if that’s what you like
- Pumpkin spice simple syrup: canned pumpkin puree, brown sugar, water, vanilla extract, cinnamon, ginger, nutmeg and clove
You can of course brew your own coffee if you want. I sometimes do this too and have instructions in the recipe card and further down this post!
How to make pumpkin spice simple syrup
While this is the most labor intensive aspect of this recipe, it’s still super easy. Plus once you make a jar, you can enjoy having it ready for coffee all week long!
Just combine the syrup ingredients in a pot over medium heat. Whisk to combine.
Cook this over medium heat until the mixture begins to bubble. Reduce heat and cook for another 8 minutes.
I usually don’t strain the syrup but if you want a thinner consistency and zero pumpkin pulp, you can strain the mixture through a mesh sieve.
Store in an airtight glass jar or bottle in the fridge and enjoy for up to one week.
I made my drink in these fun glass bottles with lids (affiliate link) so I added the pumpkin spice simple syrup, iced coffee, milk and ice and shook everything up to combine. Don’t forget to add Pumpkin Cold Foam for good measure. 🙂
If you don’t have a glass with a lid, stir in the simple syrup before adding the milk, add ice then stir again before serving.
If you want to make your own iced coffee from scratch quickly
If you don’t want to use pre-bottled iced coffee, you can make a quick cup of super strong coffee in a french press. Use 4 tbsp ground coffee and no more than 3/4 cup boiling water. Steep for 5 minutes. Then make sure to combine coffee, milk and syrup before adding lots of ice! This helps cool down the coffee for slower ice melting and stronger coffee till the last sip!

- 3/4 cup your favorite bottled iced coffee
- 1/3 cup milk of choice, I like 2 % or oat milk
- 2 tbsp pumpkin spice simple syrup or to taste

- 1 1/2 cup brown sugar
- 1 1/2 cup water
- 1 cup canned pumpkin puree
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/8 tsp ground cloves
Instructions
Pumpkin Spice Simple Syrup
- Combine all syrup ingredients in a pot over medium heat and whisk till combined.
- Cook the mixture until bubbling. Reduce heat to maintain a gentle boil and cook for about 5 minutes.
- Strain the mixture through a mesh sieve if desired (I usually don't). Store this in a glass jar or bottle in the fridge and enjoy for up to one week. This is also very yummy drizzling over ice cream.

- In a glass bottle or jar, combine iced coffee, milk, pumpkin spice syrup and ice. Shake to combine. Enjoy!
Notes
To make one serving iced coffee from scratch – the key is to brew an extra strong cup with minimal water. I usually do 4 tbsp ground coffee with 1/2 cup water. I use a french press and brew the coffee for about 4 minutes. Add the pumpkin spice syrup while its hot, then add the milk to cool it down before adding the ice. Use lots of ice and your set!
