Prosciutto Wrapped Dates (Goat Cheese Stuffed Dates)

The perfect appetizer should be simple + delicious and this is an exact description of these Prosciutto Wrapped Dates. All you need is prosciutto, creamy goat cheese, dates, honey and thyme. You can even omit the last two ingredients and still have a super tasty snack if you’re in a hurry!

A little sweet, a little salty, a little savory and a tiny pop of freshness–these prosciutto wrapped dates have it all! They come together so quickly with simple ingredients and this recipe can easily be doubled or tripled to feed a crowd. While these might feel sort of indulgent, they are made with whole foods and dates are actually very nutritious. These are a delicious + quick appetizer to have up your sleeve for special occasions. Ingredients

What you need to make prosciutto wrapped dates

  • Medjool dates – preferably pitted, but the pit is easy to remove, so either way works
  • Prosciutto
  • Goat cheese
  • Honey
  • Thyme

How to make Prosciutto Wrapped Dates

Preheat your oven to 400F.

Use a sharp knife (paring knife is best) to cut a small slit in all of the dates, being careful not to cut all the way and removing the hard stem end if its there.

Stuff each date with about 1 teaspoon of goat cheese.

Sprinkle the top of each date stuffed with goat cheese with a little fresh thyme.

Tear each piece of that salty prosciutto in half vertically into mostly equal pieces and use one 1/2 to wrap around a date. My prosciutto strips were 1-2 inches wide by about 5-6 inches long. Continue with the remaining prosciutto and place dates on a parchment paper lined baking sheet.

Bake for 20-25 minutes, until prosciutto is browned. Drizzle the top of each date with a little honey and top with more fresh thyme.

Allow them to cool for about 15 minutes to room temperature to serve.

Swaps, substitutions & additions

Goat cheese – if you don’t have goat cheese, you can also use cream cheese, feta or blue cheese.

Prosciutto – you can sub serrano ham if you’d like

Thyme – other tasty herbs include rosemary (be sparing though)

Additions – a delicious flavor and texture addition is some toasted + chopped pecans. Just add them in with the goat cheese!

  • 12 medjool dates
  • 4 oz prosciutto, (you want twelve 1-2 inch x 5 inch strips)
  • 2.53 oz creamy goat cheese
  • honey, for drizzling
  • about 8 sprigs fresh thyme

Instructions

  1. Preheat oven to 400F.
  2. Cut a small slit in each date with a paring knife, being careful not to cut all the way through.
  3. Stuff each date with about 1 tsp of goat cheese and top each with a few fresh thyme leaves.
  4. Wrap one strip of prosciutto around each date and put the seam side down on a baking sheet lined with parchment.
  5. Bake for 20-25 minutes, until prosciutto is browned.
  6. Drizzle with a little honey and add more fresh thyme leaves. 
  7. Allow to cool about 15 minutes before serving.
