Pesto Turkey Sandwich

The perfect fall lunch. Make it with my walnut kale pesto, marinated tomatoes and you will be looking forward to lunch all morning.

Ingredients

Scale
  • 2 slices multi-grain bread
  • 2 1/2 tbsp pesto
  • 1 tbsp mayo
  • 2 slices provolone cheese
  • 2 slices marinated tomatoes
  • 3 oz turkey deli meat
  • handful of mixed greens

Marinated tomatoes

  • 1 tomato (sliced)
  • 3 tbsp red wine vinegar
  • 4 tbsp avocado oil
  • 1/8 tsp salt
  • pinch of black pepper

Instructions

  1. Toast the bread, then spread one slice with mayo and the other with pesto.
  2. Marinate the tomatoes (optional). Slice tomatoes and place them in a bowl with the avocado oil, red wine vinegar, salt and pepper. Let this sit for 10 minutes.
  3. Add in order to one slice of bread: provolone cheese, sliced tomato, turkey and mixed greens. Top with remaining slice of bread. Enjoy!
