If you just can’t turn your oven on (I get you), pin this recipe for later! These cookie bars are soft, chewy and just the right amount of crumbly. Packed with peanut butter flavor with a subtle hint of honey and studded with chocolate— they can easily pass as a respectable snack or dessert.

Ingredients for peanut butter & honey oat cookie bars

I love these peanut butter & honey oat cookie bars because I pretty much always have a decent amount of each of these ingredients in my cupboard at all times. But if you don’t, I’ve placed links for amazon on some of the ingredients that I use.

What kind of peanut butter should you use for baking?

When I’m baking with peanut butter, I almost always use the creamy JIF Natural kind. I don’t know how natural it really is but it makes me feel better. You don’t need to use the natural brand to get these results, I just find that the more processed types of peanut butter yield more consistent results when baking. With that said though, I actually feel that this particular recipe might lend itself well to the more authentically natural peanut butter types. It could be worth a try if less sugar is your goal.

What if I don’t have oat flour?

If you don’t have or want to buy oat flour, it’s very easy to make your own. Just pulse oats in your blender or food processor until fine.

Are these cookie bars free of refined sugar?

While it is true that honey is the only sugar source you will add while making these cookies, I use (and mostly recommend) a processed peanut butter with added sugar for baking and the chocolate chips are also likely sweetened with a refined sugar source. Because of this, I don’t feel comfortable proclaiming that these are refined sugar free, but on the bright side, they mostly are! And you could probably alter the recipe to make it completely sugar free if you wanted to.

How to make

This is one-bowl, one-utensil baking at its finest. All ingredients get mixed in one bowl with a rubber spatula, spread onto a baking sheet and baked! Just a twenty minute stint in the oven and they’re done.

Then spread onto a prepared, rimmed cookie sheet and baked for twenty minutes.

Sprinkle with sea salt immediately after removing from the oven and allow to cool before cutting into squares.

Simple and kinda healthyish treat you can probably make right now!

Ingredients

  • 1 cup creamy peanut butter
  • 1 cup quick cooking oats
  • 1/4 cup oat flour
  • 1/2 cup honey
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp sea salt, plus more for topping
  • 3/4 cup chocolate chips

Instructions

  1. Preheat oven to 325F.
  2. In a large bowl, blend creamy peanut butter and honey until fully combined.
  3. Add egg and vanilla and stir to combine. Add oats, oat flour, baking soda and salt. Stir until fully combined. Stir in chocolate chips.
  4. Spread onto prepared, rimmed 9 x 13 baking sheet and bake for 20 minutes.
  5. Enjoy!

Notes

While I do think that you could try this recipe with a more natural peanut butter with no added sugar, I haven’t tried that yet, so no guarantees unless you use a more processed PB like I did.
