1/2cup butter (one stick) (softened)
1/4cup creamy peanut butter
1cup coconut sugar
1 egg
1 tsp vanilla
1cup all-purpose flour
3/4cup rolled oats
1/2 tsp baking soda
1/2 tsp salt
1 1/3 cup mini chocolate chips
sea salt (for topping)
Instructions
Preheat oven to 350F
Combine flour, oats, baking soda and salt in a medium-sized bowl and set aside.
In a large mixing bowl, use an electric mixer to beat butter and sugar for about 3 minutes. Add the peanut butter, egg and vanilla. Continue to beat until smooth.
Add the dry ingredient mixture and beat on low until fully combined. Stir in chocolate chips using a rubber spatula.
Use a 1.5 tablespoon cookie scoop to drop cookie dough on a parchment-lined baking sheet.
Bake for 9-11 minutes.
Allow cookies to cool for 5 minutes before transferring to a wire cooling rack. Sprinkle with sea salt.
