Soft & chewy peanut butter chocolate chip oatmeal cookies that are made with coconut sugar! But you can swap in regular sugar too. These cookies are easy, delicious and sweetly satisfying.

These cookies are just so yummy. I love using coconut sugar because it adds a hint of caramel flavor but you can certainly use regular sugar if that’s all you have! This peanut butter chocolate oatmeal cookie recipe is a simple drop cookie recipe that comes together easily and bakes up quick. Read: you can have a warm, freshly baked cookie in no time!   • Salted butter
  • Coconut sugar
  • Creamy peanut butter
  • Egg
  • Vanilla
  • All-purpose flour
  • Rolled oats
  • Baking soda
  • Salt
  • Mini chocolate chips

How to make peanut butter chocolate chip oatmeal cookies

Combine dry ingredients (flour, oats, baking soda, salt) in a small mixing bowl.

Next you’ll beat the butter and sugar together until creamy. And then the rest of the wet ingredients.

Stir in lots of chocolate chips! I like to use minis, but you can use regular too.

Want perfectly uniform cookies? Use a cookie scoop! It’s really a tiny investment that really makes cookies more appealing IMO.

Before baking these cookies, I like to sprinkle extra mini chocolate chip cookies on top, just for presentation and of course extra chocolate! But these are already pretty chocolatey so if you don’t want to mess with this part, feel free to skip!

Bake cookies for 9-11 minutes. And another pro tip for beautiful cookies? Do the cookie scoot. Get a set of round cookie cutters.

Right after you remove the cookies from the oven— find a size that is a good amount large than your cookie and scoot the cookie around inside the cutter to smooth out the edges.

Ingredients

  • 1/2 cup butter (one stick) (softened)
  • 1/4 cup creamy peanut butter
  • 1 cup coconut sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • 3/4 cup rolled oats
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/3 cup mini chocolate chips
  • sea salt (for topping)

Instructions

  1. Preheat oven to 350F
  2. Combine flour, oats, baking soda and salt in a medium-sized bowl and set aside.flour, oats, baking soda and salt in a small mixing bowl
  3. In a large mixing bowl, use an electric mixer to beat butter and sugar for about 3 minutes. Add the peanut butter, egg and vanilla. Continue to beat until smooth. 
  4. Add the dry ingredient mixture and beat on low until fully combined. Stir in chocolate chips using a rubber spatula.
  5. Use a 1.5 tablespoon cookie scoop to drop cookie dough on a parchment-lined baking sheet. peanut butter chocolate chip oatmeal cookie in a cookie scoop
  6. Bake for 9-11 minutes. 
  7. Allow cookies to cool for 5 minutes before transferring to a wire cooling rack. Sprinkle with sea salt.
