Ingredients

  • 1 15 oz can plus 1/3 cup coconut milk
  • 1 cup orange juice
  • 1/3 cup maple syrup

Instructions

  1. Soak 10 popsicle sticks in water 1 hour before making popsicles.
  2. Place the cans of coconut milk in a large mixing bowl and let hot water from the sink run over them for a couple of minutes to smooth out the coconut cream that may have solidified.
  3. Open cans of coconut milk. Add all ingredients to the mixing bowl and whisk well.
  4. Pour the mixture into each mold. Put the lid on, then place a popsicle stick in each slot. Freeze for 30 minutes, then straighten out the popsicle sticks. Freeze 5 1/2 hours more.
  5. Run popsicle mold under lukewarm water and gently tug on the popsicle stick until the popsicle slides out. Enjoy!

Notes

Because this is a thin batter, you’ll want to weigh down the sticks by soaking the popsicle sticks in water 1 hour before making popsicles.
